Black garlic is created through a controlled maturation and fermentation process lasting several weeks, using fresh garlic (Allium sativum). During this process, taste, colour and ingredients change:
The garlic becomes mild, almost odourless and takes on its characteristic dark colour.

of which 1.5 mg S-allyl-L-cysteine (SAC)
SAC is a naturally occurring sulphur compound that forms during the fermentation process and is used to standardise the extract.
